The cheese in the fridge is referencing the lab rats that are made to solve a puzzle to obtain a reward. I can't exactly figure out what the MV means but it seems like the character is having issues with their current purpose in life and had decided to accept their fate but then wanted to break free from the monotony. There is definitely some weird dark tones with the black and red colors and I think that is symbolic for understanding ones self as not purely this or that.

I was thinking that the science guy was using her emotions as an experiment

Here's my interpretation of this song and MV, since I haven´t found any other in the comments The girl works for someone(maybe represented by the city and the scientist, maybe it is a kind of society or system ), or is forced to do something which involves killing people ( because of the blood) . She says that because of that she starts losing herself( in the chorus she says that the more she obeyed her skin the more she became invisible), but she finds something that can be a reason for her to be alive. Following that reason may be dangerous, maybe because it reminds her of something she did, or someone she lost, that´s why she ask herself if she is ready to be scared again, but she says that she can´t be controlled and she wants to have high hopes, so she rebels against the system. Then she thinks about if what she is doing is the right choice, but she realized that being forced to do something even if it´s the right thing it's not something she wants to do, and later in the song she says that she actually is scared about her choice, but remembers that the hatred she has inside of her is something that can be used to be saved. In the MV's ending, she wakes up from the chair where she was asleep and escapes with the spirit ( the spirit may be the reason she has to fight against the system ) So this is all I can say about the song, I really like the animation and the english subtitles are amazing, I hope you 've found my interpretation useful.

Maybe you can try linking it to the other songs animated by the same person and referenced in this song, them being Seigi (Justice) and Kettobashita Mofu. Both can be found on this channel. My own personal interpretation is that she started out fighting for justice and rights for some group of people as referenced at the start but begins to neglect those around her and herself and ends up working for the man in the video. I guess the man could be someone who rules over the world like a governing body, as he is depicted to be overseeing the city with the girl supposedly working with him. The ending could be the girl resolving to follow her beliefs, leaving her job post working with the man, and end up working solely for herself and her beliefs. This is of course just my interpretation from listening to the three songs and paying attention to the videos, but there could be many many things I missed and your interpretation is just as valid as mine. After all, people interpret art differently, and this is one of the beauties of art.
